Step 1
Preheat oven to 350° F.
Step 2
To a 9x13 baking dish add the rice and broth and mix together. Make sure the rice is completely submerged in the broth or it will not cook evenly.
Step 3
In a bowl, combine the olive oil, sliced chicken, onion, peppers and fajita seasoning. Stir everything together. Add on top of the rice- do not mix.
Step 4
Cover the baking dish with foil and bake 45 minutes to 1 hour, or until the rice is tender and the chicken is cooked through.
Step 5
Uncover, top with shredded cheddar cheese and put back in the oven 5 minutes to melt the cheese.
Step 6
Serve with your favorite toppings
