Ingredients

3 cupsshredded chicken
homemade or store bought
1red bell pepper
finely diced
1red onion
small, finely diced
2 stalkscelery
finely diced
⅓ cupcilantro
finely chopped
½ cupmayonnaise
⅓ cupplain greek yogurt
1chipotle pepper in adobo sauce
finely chopped, from can
3 tablespoonsadobo sauce
from the same can
¼ cuplime juice
1 teaspoongarlic powder
⅛ teaspooncumin
⅛ teaspoonsalt
Instructions
Step 1
1. Start by shredding your chicken breast. I used a rotisserie chicken to keep it simple but you can also cook chicken at home and shred. Dice and chop all the veggies.
Step 2
2. In a bowl combine all the ingredients for the dressing. The mayo, Greek yogurt, chipotle pepper and sauce, lime juice, garlic powder, cumin, salt and mix.
Step 3
3. Toss the salad- add the chicken, bell pepper, celery, red onion and cilantro to the dressing and toss well to combine.
Step 4
4. Serve with your favorite tortilla chips or use the salad as a filling for a sandwich or wrap and enjoy!
