Instructions
Step 1
1. Preheat the oven to 200°C (fan).
Step 2
2. Unfold the puff pastry and cut it into 12 squares, each approximately 8 cm x 8 cm.
Step 3
3. For each square, using a knife, cut a diagonal line of 1 cm near each corner. Then connect the cut stripe to the nearby corner.
Step 4
4. Repeat this for all four corners.
Step 5
5. Next, fold one corner toward the centre, aligning it with the middle of the adjacent diagonal.
Step 6
6. Fold the next corner to overlap the previous fold.
Step 7
7. Continue with the third corner, and tuck the final corner under the diagonal to secure it, forming a shape that resembles a four-pointed star. Arrange the prepared pastry squares on a baking tray lined with parchment paper.
Step 8
8. Fill each centre with goat cheese and place a sliced fig half on top.
Step 9
9. Brush with egg wash and bake for 10-12 minutes, or until golden brown.
Step 10
10. Drizzle with honey, sprinkle with thyme leaves, and enjoy!
