2 Tbspbasil
0.5eggplant
1clove garlic
6cherry tomatoes
2 Tbspolive oil
30mlwhite wine
¼ tspsalt
¼ tsppepper
50mlheavy cream
30gparmesan

Instructions
Chicken
Step 1
Cut the chicken into small pieces and chop the basil.
Step 2
Heat the olive oil in a frying pan and set to a medium-high heat. Add the chicken and fry for approx. 3 mins.
Step 3
Add the spices and fry again for approx. 2 mins. and then remove from the pan.
Eggplant sauce
Step 4
In the meantime, dice the eggplant, halve the tomatoes and finely chop the garlic and basil.
Step 5
Heat the olive oil in the same pan in which the chicken was fried. Turn the heat to medium-high and add the eggplant. Sauté for approx. 4-5 mins.
Step 6
Now add the tomatoes, garlic and spices and fry for approx. 3 mins.
Step 7
Pour in the white wine and leave to reduce for approx. 2 mins
Step 8
Cook the pasta according package instructions.
Step 9
Place the vegetables in a deep bowl and puree until a homogeneous mixture is formed.
Step 10
Return the sauce to the pan and turn the heat down to low.
Step 11
As soon as the sauce is simmering, add the cream and simmer for another 3 minutes.
Step 12
Now add the chicken and grate in the Parmesan.
Step 13
Finally, add the pasta and mix everything well. Enjoy!
