Instructions
Step 1
-Preheat oven to 325 degrees F. Spray a 9x13-inch pan with cooking spray.
Step 2
-Beat the eggs, milk, cottage cheese, cooked bacon/meats, salt, and pepper together in a large bowl using a fork, whisk, or hand mixer.
Step 3
-Pour into the prepared pan and bake for 18-22 minutes, (or forget about it like me and take it out in a panic). Cool before cutting into 12 circles or squares.
Step 4
-Top 12 of the english muffin halves with the eggs and cheese then top with the other muffin halves to make 12 sandwiches.
Step 5
-Individually wrap each sandwich with waxed paper, aluminum foil, or parchment paper and freeze, sealed in a large ziploc bag, for up to 1 month.
