These raw food cookies are a great healthy snack for your lunchbox so you eat healthy and won’t spend money on other snacks in the shop . They are a great way to use up those extra carrots or avocados you have left over so there is no food waste and they taste absolutely delicious .

Step 1
Add the nuts and sunflower seeds to a processor and pulse a few times only just to make them a little smaller but not ground into a fine nut meal as you want them to add structure and bite , then add the avocado oats maple syrup and lemon juice and process until it’s all mixed

Stir in the chocolate and carrot then mix and when it’s combined take spoonfuls make them into cookie shapes (15 approx) and add to a baking sheet .
Step 3
Preheat the oven to its lowest temperature then bake the cookies for 10 minutes turn the oven off and let them sit in there overnight . You can pack these in your lunchbox for a healthy treat on the go and they keep for 5 days in the fridge
