Instructions
Step 1
Grease an 18 cm (7 inch) springform pan and line the bottom with parchment paper.
Step 2
Slice the peaches thinly and arrange them in a rosette pattern in your pan.
Step 3
In a bowl, mix the eggs with the sugar, pinch of salt, and vanilla. Beat until the mixture doubles or triples in volume.
Step 4
Sift the almond flour and gently fold it in with a spatula until fully incorporated.
Step 5
Pour the mixture into the pan, and bake at 160°C (320°F) for about 40 minutes. Baking time may vary depending on your oven, but the cake is done when it's golden brown on top and a skewer inserted in the center comes out clean.
Step 6
Let the cake cool for about ten minutes before unmolding. You can dust it with powdered sugar and it’s ready to enjoy!
