Instructions
Step 1
Boil mirin and sake in a saucepan for 30 seconds to 1 minute over medium heat.
Step 2
Add soy sauce, turbinado sugar, garlic paste, and duck fat. Mix, bring to a boil, then simmer on low heat for 10 minutes, stirring occasionally.
Step 3
Meanwhile, cut chicken thighs into bite-sized pieces and Japanese leeks into 2cm pieces.
Step 4
Thread chicken and leek pieces onto skewers, alternating 3 chicken and 2 leek pieces per skewer.
Step 5
Heat a frying pan over medium-high heat. Add oil and sprinkle skewers with sake.
Step 6
Fry skewers for 2 minutes on each side to lightly char.
Step 7
Reduce heat to low, cover pan, and steam-cook for 5 minutes.
Step 8
Remove lid, increase heat to medium-low. Brush skewers with prepared sauce and fry for 30 seconds to create a glaze.
Step 9
Turn skewers and repeat glazing until evenly coated.
