This peanut-based Nigerian spice rub really does go on everything! If you haven’t tried Suya ribs, you’re missing out—savory, spicy, and absolutely irresistible. These ribs are made right in the oven and then finished on a grill for that perfect combination.

Step 1
Start by remove any membrane from your ribs and pat dry with some paper towels.

Mix together the majority of your suya mix (save a little off to the side), along with the bbq seasoning rub and salt.

Step 3
Add mustard to each side of your ribs and rub all over (this will help the seasoning mix stick better). Apply your seasoning mix generously to both sides.

Place on a large baking sheet lined with foil. Wrap your ribs tight in additional foil so everything is covered.
Step 5
Bake at 300 degrees for 2 hours.
Step 6
After 2 hours, remove your ribs from the oven and let cool slightly. In a mixing bowl or large cup, mix together your bbq sauce, the leftover suya mix and some of the drippings from the ribs.

Heat your grill to a medium flame. Place ribs meat side down on the grill.
Step 8
Brush a thin layer of sauce over the backside of the ribs. Let them cook for 5-10 minutes.
Step 9
Flip and brush the top side with more sauce. Close the lid and let the sauce set for another 5-10 minutes. You can add another layer of sauce halfway through if you would like.
Step 10
Remove from the grill, let cool, then just slice and enjoy!
