Instructions
Step 1
Marinate yellowtail fillets in soy sauce and mirin in a sealed bag. Refrigerate for 15 minutes.
Step 2
Mix soy sauce, mirin, sake, and sugar in a bowl. Set aside.
Step 3
Remove fillets from marinade and pat dry.
Step 4
Coat fillets lightly with cornstarch, patting off excess.
Step 5
Heat oil in a pan over medium heat. Fry fillets for 2 minutes on each side.
Step 6
Increase heat to high. Add teriyaki sauce and cook until thickened.
Step 7
Turn fillets to coat both sides with sauce (about 30 seconds each).
Step 8
Remove from heat and serve.
