Spicy Chipotle Beef-Stuffed Aubergines with Hot Honey Drizzle

Ingredients

2aubergines
large, cut in half and hollowed out
400gground beef
instead of chicken
¼ cupextra virgin olive oil
¼ cupgrated parmesan cheese
1 tablespoonschipotle in adobo
chopped
1 teaspoonsmoked paprika
1 teaspoononion powder
4cloves garlic
chopped
2 teaspoonslemon zest
1 cupbasmati rice
cooked
2 tablespoonssalted butter
2 cupszucchini
sliced, chopped, or use the scooped-out aubergine flesh
HOT HONEY
Instructions
Step 1
Preheat oven to 400°F (200°C).
Step 2
In a bowl, mix the ground beef, olive oil, parmesan, chipotle, paprika, onion powder, garlic, lemon zest, salt, and pepper.
Step 3
Prepare the aubergines: Place the hollowed-out aubergine halves on a baking sheet. Drizzle with a little olive oil and bake for 10-15 minutes until just starting to soften.
Step 4
In a pan, cook the ground beef mixture until browned. Stir in the cooked basmati rice and zucchini (or the scooped-out aubergine flesh), mixing well.
Step 5
Stuff the aubergines: Fill the baked aubergine halves with the ground beef and rice mixture. Top with a sprinkle of parmesan if desired.
Step 6
Bake for 20-25 minutes until the aubergines are tender and the filling is golden.
Step 7
For the hot honey sauce: In a small pot, warm together honey, hot sauce, cayenne, chipotle chili powder, onion powder, and a pinch of sea salt.
Step 8
Once the aubergines are done, drizzle with the hot honey sauce and serve.
