Instructions

Step 1
1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.

2. In a large bowl, mix together the vegetable oil, granulated sugar, and vanilla extract until well combined.

3. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. Fold in the shredded zucchini and chocolate chips, and chopped walnuts if using.

6. Spread the batter evenly in the prepared baking pan.

7. Bake in the preheated oven for 25-30 minutes, or until the brownies spring back when gently pressed.

8. Allow the brownies to cool in the pan before cutting into squares and serving.
