This is one recipe I would absolutely weigh ingredients rather than measure by volume.

Instructions
Step 1
Combine sourdough starter and water in a mixing bowl and mix.
Step 2
Add flour and salt and mix into a shaggy dough (I usually just use my hands). It will be very sticky.
Step 3
Cover bowl with plastic wrap or dish towel and let it sit on the counter for 1 hour.
Step 4
After 1 hour, begin stretch and folds inside the bowl. Grab under the dough and gently pull up and fold over the top of the dough. Turn bowl 90 degrees and repeat until you've done it 4 times. Repeat this process every 30 minutes, 3 more times (so a total of 4 times)
Step 5
After last stretch and fold, cover bowl with plastic wrap or dish towel and let it sit on the counter for 6 to 12 hours, until dough has increased in size by 50-75%.
Step 6
After 6-12 hours, drop dough onto a lightly floured surface and shape. Return dough into a clean bowl or bread basket seam side up and cover with plastic wrap or a towel. Put into fridge for another 12 hours.
Step 7
Preheat oven and Dutch oven at 450 degrees. When preheated, turn dough onto a piece of parchment and score however you'd like. Place parchment with dough into Dutch oven and cover with lid.
Step 8
Turn oven down to 425 degrees and bake with lid for 40-50 minutes. Remove lid and bake for additional 15-20 minutes.
