Instructions
Prepare the cucumbers:
Step 1
Thinly slice the cucumbers and sprinkle them with salt. Let them sit for about 10-15 minutes.

Rinse the cucumbers under cold water and drain them well.

Squeeze out any extra water.
Make the Dressing:

In a small bowl, combine minced garlic, Korean red pepper flakes, sesame oil, soy sauce, sugar, and rice vinegar. Stir everything together until the sugar is dissolved.
Combine and marinate:

In a larger bowl, mix the cucumbers and chopped green onions.

Pour the dressing over the cucumbers and toss everything together so the cucumbers are well coated.
Step 7
Let the salad marinate for at least 10 minutes.
Finish & Serve

Just before serving, sprinkle toasted sesame seeds over the salad.
Step 9
For added flavor, you can garnish with fresh cilantro if you’d like.
