Step 1
Bake enough tater tots for 3 - 4 tots per burrito. Halfway through, rotate them, smash them, add salt and pepper. Set a
side to cool.
Step 2
Finely chop the peppers. Start browning the sausage. When the sausage is almost done, add the peppers. Let it simmer together for a bit. Drain grease if necessary. Remove mixture from the pan and set aside.
Step 3
Crack eggs into a bowl and add cottage cheese. Whip together. Add butter to the pan and pour in the egg mixture. Scramble and add salt and pepper to taste.
Step 4
Assemble each burrito with egg, sausage mix, a few tots, and a generous handful of cheese and wrap it up. lightly toast each side of the burrito on low in the pan. Wrap in parchment paper.
