Ingredients

4 tablespoonsbutter
2 tablespoonsolive oil
1 cupcelery
chopped
1 tablespoongarlic
minced
1 cupcarrots
shredded
ยฝ teaspoonsalt
ยฝ teaspoonblack pepper
2 teaspoonsonion powder
1 tablespoonitalian seasoning
ยผ cupflour
3 cupschicken broth
3 cupsmilk
1 ยฝ cupheavy cream
2 cupschicken
cooked, shredded
8 ouncefrozen spinach
chopped
16 ouncesgnocchi
Instructions
Step 1
1. In a large pot, over medium heat, melt butter and add olive oil.
Step 2
2. Once butter is melted, add in celery and cook for 5-7 minutes until soft.
Step 3
3. Add garlic and stir for 30 seconds, then add in carrots. Season with salt, pepper, onion powder, and Italian seasoning.
Step 4
4. Add in flour. Stir for 2 mins until everything is combined.
Step 5
5. Add in chicken broth, milk and heavy cream, stir. Toss in frozen spinach and shredded chicken, stir to combine.
Step 6
6. Turn up the heat and bring soup to a boil. Then gently add in gnocchi and boil for 4-5 minutes.
