Instructions

Granola:

Step 1
Preheat Oven: Preheat your oven to 175°C (350°F).

2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped almonds, sunflower seeds, pumpkin seeds, sesame seeds, dried oregano, dried thyme, garlic powder, onion powder, sea salt, black pepper, and lemon zest. Mix well to evenly distribute all ingredients.

3. Add Wet Ingredients: In a small bowl, whisk together the olive oil and honey until well combined. Pour this mixture over the dry ingredients and stir until everything is evenly coated.

4. Spread on Baking Sheet: Line a baking sheet with parchment paper. Spread the granola mixture evenly on the prepared baking sheet.

5. Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, stirring halfway through, until golden brown and fragrant. Keep a close eye on it to prevent burning.
Step 6
6. Cool and Store: Remove from the oven and allow the granola to cool completely on the baking sheet. It will harden as it cools. Once cooled, transfer to an airtight container and store at room temperature for up to 2 weeks.

Tzatziki

Step 7
1. Prepare Cucumber: Grate the cucumber using a box grater. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This will prevent the tzatziki from becoming watery.

2. Combine Ingredients: In a mixing bowl, combine the Greek yogurt, squeezed cucumber, minced garlic, olive oil, white wine vinegar (or lemon juice), chopped dill, sea salt, and black pepper.

3. Mix Well: Stir until all ingredients are well combined. Taste and adjust seasoning if needed.
Step 10
4. Chill: Cover the tzatziki and refrigerate for at least 30 minutes to allow the flavors to meld.
