Ingredients

1 teaspoonolive oil
4 slicesbacon
or pancetta diced into pieces
1red chilli
or jalapeño pepper, finely chopped
2 clovesgarlic
fat, crushed
1red onion
medium, finely diced
1 tablespoonbrown sugar
1 tablespoondry sherry
or cider vinegar
2 teaspoonsworcestershire sauce
½ cuppassata
strained tomatoes
2 cupsnavy beans
cooked
Instructions
Step 1
Heat the olive oil in a skillet and add the bacon or pancetta and cook until browned (you can drain rendered fat at this point).
Step 2
Add the chilli or jalapeño and cook for one minute.
Step 3
Add the onion and cook five minutes, until soft, then add the brown sugar and continue cooking until it forms caramel. Add the dry sherry or cider vinegar to deglaze the pan.
Step 4
Now add the Worcestershire sauce, then the passata and bring to the boil and simmer uncovered about 5 minutes.
Step 5
Finally add the baked beans and bring back to the boil and let simmer another 5 minutes until the beans absorb the flavour of the sauce.
Step 6
Serve with potato cakes or English muffins or on toast for breakfast.
