Instructions
Step 1
Chop up everything and wash rice
Step 2
Season the chicken thighs generously
Step 3
Heat oil in pan on medium heat
Add chicken thighs “skin” down
Step 4
Get a good sear on the chicken but they don’t need to be cooked all the way through at this point
Step 5
Turn heat down to medium low, cook chicke. 1-2 minutes more and remove from pan. Set aside
Step 6
Add in onion, garlic, and chili crisp oil to the pan. Sautee for 1-2 minutes before turning heat back up to medium
Step 7
Add washed rice to the pan. Sautee for a few minutes until the rice looks dry
Step 8
Add some extra spice mix to the rice
Step 9
Mix everything together. Add chicken stock and bring to a boil
Step 10
Once boiling - add back in the chicken thighs, cover, and turn heat down to low. Simmer for 12 mins.
Step 11
Finish with a squeeze of lemon, chopped parsley, and parmesan
