Step 1
Preheat the oven to 375°F (190°C).
Step 2
In a bowl, mix together Dijon mustard, orange juice, orange zest, brown sugar, garlic, salt, and pepper.
Step 3
Place the pork loin in a roasting pan and pour the sauce over it. Scatter cranberries around the roast.
Step 4
Roast for 60-75 minutes, until the internal temperature reaches 145°F (63°C).
Step 5
Let it rest for 10 minutes before serving.
