Instructions

Step 1
Place potato in a large saucepan; add cold water to cover potato by 2 inches. Bring to a boil over medium-high heat; cook 7 minutes or until potato is partially cooked.
Step 2
Add parsnips, carrot and honey to saucepan; return to a boil. Cook 16-18 minutes or until vegetables are tender. Drain vegetables; return to saucepan. Add butter, salt and pepper; mash until smooth. Serve warm.
