Instructions
Step 1
Rinse your rice until water runs clear, about 4 times, more if necessary.
Step 2
Start rice in pressure pot with goya seasoning according to seasoning package instructions and let cook while you begin your taco meat.
Step 3
Add ground beef to a skillet on medium high heat, cook until browned.
Step 4
In the same pan, add onion and garlic and sauté until aromatic, about a minute.
Step 5
Sprinkle in taco seasoning, add canned petite diced tomatoes (with juice), mix until well incorperated. Add a tablespoon of water at a time if necessary, but juices from can usually are just enough.
Step 6
Once rice is done cooking, add about 1-2 cups to your meat, mix thoroughly. Adjust ratio to preference. I usually do about a 1:1.5 meat to rice ratio. Sprinkle with shredded cheese and other toppings of choice like cilantro, sour cream, lemon or lime juice, so on. Serve with blue chips or with flour tortillas. We use sweet tortillas to add a bit more flavor and a subtle sweetness.
