Instructions

Step 1
1. In a large pot, add butter and garlic and cook for about 3o seconds.
Step 2
2. Add in chopped onion, carrots, celery.
Step 3
Italian seasoning. and salt and pepper. Cook for about 5 minutes, or until veggies start to soften.
Step 4
3. Pour in chicken stock and water. Add bay leaves and chicken.
Step 5
4. Bring to a boil then reduce heat to simmering.
Step 6
5. Let simmer for about 15 minutes.
Step 7
6. Add lemon juice and rice and cook for an additional 5 minutes.
Step 8
7. Add parsley and remove bay leaves a few minutes before serving.
