Instructions
Step 1
Heat olive oil in skillet over medium heat. Add whole clove of garlic and swirl it around the pan. Then add sausage meat and brown, breaking up into a crumble. Add white wine before completely brown. Remove from pan and set aside.
Step 2
Add a bit more olive oil. Add onion and sautรฉ, stirring, for about 10 minutes, until onion is translucent . Add squash and cook, stirring occasionally, for about 15 minutes. Add a bit of vegetable broth if squash appears to dry out. Remove from heat and mash.
Step 3
Set aside enough sausage and mozzarella to sprinkle over top. Combine squash sauce, sausage, and mozzarella cubes, along with cooked gnocchi, in a large bowl, and toss to combine. Pour into an oiled casserole dish. Top with remaining sausage and mozzarella, and Parmesan.
Step 4
Bake in 400F oven for 10 to 15 minutes. Let sit a few minutes. Serve with crusty bread.

Prepare gnocchi per package instructions.
