Instructions

Make stewed apples

Step 1
In a small saucepan, add diced apple, coconut oil, cinnamon, salt, lemon juice, and 1/2 cup water. Bring to a simmer over medium heat.

Cook for 10 minutes, or until the apples become tender and fragrant and the water reduces to a syrupy consistency.

Make the pancakes (while apple cooks)

In a medium bowl, combine almond flour, baking powder, salt, and spices.

In a separate bowl, whisk together the coconut milk, eggs, vanilla, and 1/4 cup water.

Stir the coconut milk mixture into the dry ingredients.

Heat frying pan over medium-low heat. Add a little coconut oil to prevent batter from sticking.
