0.5 lbchicken
0.5 lbpasta
¼ cupsun-dried tomatoes
julienned, plus
2 Tbutter
1shallot
medium, diced
1 tsalt
to taste
1 tItalian seasoning
½ tonion powder
1 tpepper
to taste
½ tpaprika
can sub smoked
½ tchicken bouillon
cayenne
optional
½ tred pepper
to taste
6 clovesgarlic
to taste
olive oil
2 ½ cupschicken broth
½ cuphalf & half
or cream
½ cupfresh parmesan
plus more to garnish
spinach
Fresh basil
torn, to taste
Instructions
Step 1
1. In a large sauce pan, heat about 1 T of sun-dried tomato oil and 1 T butter over medium heat. Cook your chicken until no longer pink and set aside. Cut into bite-sized pieces.
Step 2
2. Reduce heat to low and add in another T of butter along with your shallot and seasonings.
Step 3
Cook for 2-3 minutes (add in some olive oil if needed). Add in your garlic and cook for another minute.
Step 4
3. Pour in your chicken broth, scraping up any brown bits on the bottom of the pan. Bring to a simmer, add in your pasta, and stir. Cover and simmer until al dente, about 10-15 minutes, stirring every few minutes.
Step 5
4. Once your pasta is done, add in your half & half, sun-dried tomatoes, and parmesan. Stir until melted.
Step 6
5. Add in your spinach, cooked chicken, and basil. Stir until spinach is wilted. Serve immediately and top with more fresh parm.
