2.5 lbsground bison
I buy the 2 pack from Costco
1green bell pepper
seeded and sliced, can use yellow and red for color
1red onion
chopped
2.5 ozblack olives
sliced, drained
29 ozPork & Beans
drain & dump chunk of pork
29 ozkidney beans
drain
15 ozstewed tomatoes
drain most of the juice off
8 oztomato sauce
14 ozsalsa
I get one 7 oz can of red and one 7 oz can of green Herdez
15 ozcactus
napolitos, drain & rinse
4stalks of celery
sliced into half moons
4.5 ozmushrooms
sliced, drained
16 ozpicante salsa
I use Pace Hot salsa
1 packagebacon
Instructions
Step 1
cook bacon and set aside on paper towel
Step 2
brown bison meat in bacon grease
Step 3
drain off grease from cooked bison
Step 4
chop up bacon
Step 5
add all ingredients to large pot and mix well
Step 6
heat on medium for 15-20 minutes until ingredients show signs of heating up
Step 7
cook on low for 2-4 hours stirring often to prevent burning on bottom
Step 8
serve with sour cream and sharp cheddar for garnish
