Ingredients

70 gmspanko breadcrumbs
1 sprinklesalt
40 gmsbaby spinach
finely chopped
1brown onion
finely diced
2cloves garlic
crushed
100 gmsfetta
1egg
10 gmsparsley
finely chopped
30 gmskalamata olives
1lebanese cucumber
diced
0.5red onion
sliced
2tomatoes
diced
10 mlslemon juice
2wholemeal pita breads
200 gmstzatziki dip
500gchicken mince
Instructions
Step 1
Preheat oven to 190 degrees Celsius and line a tray with baking paper.
Step 2
Combine chicken mince with spinach, breadcrumbs, salt, onion, garlic, fetta, egg and parsley. Mix together with your hands and form into 12 meatballs.
Step 3
Heat a non-stick frypan over medium-high heat. Cook meatballs for 8 minutes, about 2 minutes each side. Remove from pan and add to baking tray. Bake in the oven for 10 minutes.
Step 4
Meanwhile, combine olives, cucumber, onion, tomatoes and lemon juice.
Step 5
Store all ingredients in the fridge, separately, until ready to serve.
Step 6
Serve 3 meatballs with 1/4 of the salad, 1/2 pita bread and 50g of tzatziki dip.
