Instructions

Step 1
Preheat oven to 425. Sauté onion and garlic in olive oil over medium-low heat until fragrant. Add chickpeas and continue to cook for 3 to 4 minutes stirring occasionally. Mix in broccoli and continue cooking and stirring until broccoli is tender crisp. Stir in rice and heat through. Season with salt and pepper.
Step 2
While rub salmon fillets with olive oil and sprinkle with seasoning. Bake for 12 minutes, flipping if necessary.
Step 3
Serve with a cucumber tomato salad, or salad of choice.
