Mock Mashed Potato Puree

This is a puree that is intended to be eaten just as it is--it closely resembles mashed potato. Your unsuspecting guests will not be able to tell the difference! But of course it has all the advantages of the 'super-vegetable' cauliflower--and none of the drawbacks of potato. It is also a wonderful, healthful product for thickening soups and sauces. You thus avoid the use of flour and other undesirable, bad carbohydrate thickeners.

Instructions

Step 1
Steam the cauliflower florets, together with the onion, until tender.

Step 2
Place the vegetables in a food processor, together with the oil, salt, pepper, and nutmeg to taste. Blend to obtain a smooth consistency. Depending on the quality of the cauliflower, you might need a little more liquid to obtain this result. Hence add a little vegetable broth (or juice) if needed.

Optional: if you want to serve the mock mashed potato puree as a side dish (and not use it as a thickener), you may choose to mix in the chopped olives.
