Cheese Toastie and Tomato Soup

Quick tomato soup made with passata, vegetable stock, and a splash of cream or milk, served with cheese toasties for dipping.

Instructions

Step 1
1. Prepare the soup: Heat olive oil or butter in a saucepan. Add the passata, water, and the crumbled stock cube. Simmer for 5 minutes.
Step 2
2. Stir in the cream or milk and a pinch of sugar. Season with salt and pepper to taste. Simmer for another 2 minutes.
Step 3
3. Make the toasties: Butter the outside of the bread slices. Place grated cheese between them, then toast in a pan or sandwich press until golden and melted.
Step 4
4. Serve the soup in bowls with the toasties on the side for dipping.
