Ingredients

500 gmschicken mince
1brown onion
finely diced
2cloves garlic
crushed
1carrot
grated
1zucchini
grated
20 gmsbreadcrumbs
1 sprinklesalt
1 sprinklepepper
300 gmsbasmati rice
1 headbroccoli
cut into smaller florets
1 headcauliflower
cut into smaller florets
80 mlssoy sauce
5 mlsrice vinegar
20 mlshoney
5 gmsginger
grated or finely chopped
5 gmscornstarch
Instructions
Step 1
Preheat oven to 180 degrees Celsius and line a tray with baking paper.
Step 2
Combine chicken mince with onion, 1 clove garlic, carrot, zucchini, breadcrumbs, salt and pepper. Use your hands to roll into 12 meatballs.
Step 3
Place meatballs on the baking tray and cook in the oven for 35 minutes or until cooked through.
Step 4
Meanwhile, cook rice according to packet instructions.
Step 5
Steam broccoli and cauliflower.
Step 6
Make the sauce. In a saucepan, add soy sauce, vinegar, honey, garlic, ginger and cornstarch. Place on low heat and simmer for 3-5 minutes. Add meatballs and toss to combine meatballs in the sauce.
Step 7
Divide rice into four serves. Top with meatballs and vegetables. Store leftovers in the fridge.
