Instructions

Step 1
Remove the ham's skin, while keeping the fat layer underneath.
Step 2
Cut a criss-cross pattern in the fat layer, making squares of about 1.2/2 cm per side. Put a clove in the center of each square.
Step 3
Mix all the ingredients for the glaze, then spread about 1/3 of it on the top of the ham. Pour the pineapple juice in the pan with the ham.
Step 4
Cover the ham with foil and put it in a pre-heated oven at 150°C (ventilated) for 40 minutes
Step 5
Uncover the ham, add a second spread of the glaze and baste the exposed cut with the juices from the pan. Cook uncovered for another 20 minutes.
Step 6
Do one last round of glazing and basting, then let cook for 20 more minutes.
Step 7
Transfer the meat to a plate and let it rest for at least 10 minutes before cutting into it. Mix the juices of the ham with a simple roux and some additional mustard to make a gravy.
