Instructions

Step 1
Preheat a grill pan or skillet over medium heat.
Step 2
Drizzle the olive oil over the zucchini, bell pepper, and eggplant slices. Season with salt, pepper, and oregano.
Step 3
Grill the vegetables for 4-5 minutes on each side until tender and slightly charred.
Step 4
Warm the tortilla or flatbread in the same pan for a minute to make it flexible.
Step 5
Arrange the grilled veggies, mozzarella, mixed salad, and sliced tomatoes in the center of the tortilla.
Step 6
Drizzle with a little more olive oil and add fresh basil for extra flavor if desired.
Step 7
Fold the sides of the tortilla over the filling and roll it tightly.
