Instructions

Step 1
In a mixing bowl place your yeast , white sugar and warm water into the bowl Give a good mix and let stand for 5-10 minutes
Step 2
Now add your flour , salt , blueberries , cinnamon , nutmeg , brown sugar and vanilla Mix well by hand or with your hands electric mixer . If to sticky add a bit of extra flour at a time
Step 3
Place the dough into a greased bowl , cover and let rise for 1 hour until double in size .
Step 4
Divide the dough into 8 , 10 or 12 balls . Cover and let rise for another 10 minutes while you get your pot of water up to a boil
Step 5
I used 6 cups of water and 1/4 cup of honey . Bring water to a boil then turn stove off .
Step 6
Shape your bagels by placing your thumb in the center of the dough breaking the dough . Rotate until the perfect shape . Place the bagels into the hot water for 45 seconds on each side . Remove from the pot and place on to a cookie tray lined with parchment paper
Step 7
Pre heat your oven to 350 degrees
Step 8
Brush the bagels with egg wash and sprinkle with brown sugar ( optional )
Step 9
Bake at 350 degrees until golden brown . Time will vary on the amount of bagels you make . Broil the last minute or 2 .
Step 10
Let cool before slicing
