Instructions
Step 1
Mix lye water powder and salt into water until fully dissolved. Sift bread flour into a large mixing bowl. Add lye water mixture gradually while mixing until all flour becomes dough-like crumbs.
Step 2
Transfer crumbs to a freezer bag, remove air, and seal. Rest for 1 hour at room temperature.
Step 3
Knead dough by stepping on the sealed bag to flatten, then fold into thirds. Repeat this process for about 15 minutes until dough becomes smooth.
Step 4
Return smooth dough to sealed bag and rest at room temperature for 24 hours.
Step 5
Sprinkle work surface with flour and roll dough thinly. Cut into four pieces to fit pasta machine.
Step 6
Process each piece through pasta machine, starting at widest setting (0) and gradually reducing to setting 5. Dust with flour if dough becomes sticky.
Step 7
Cut noodles using the spaghetti attachment.
Step 8
Cook in boiling water for 1 minute. Drain and rinse with cold water, then hot water before serving.
Step 9
For same-day storage: Dust noodles with flour, wrap portions in plastic wrap without crushing, and store in a freezer bag in the refrigerator.
Step 10
For long-term storage: Follow step 9, then place in freezer for up to 3 months. When cooking frozen noodles, boil for 1 minute.
