Ingredients

1Zucchini
Medium, coarsely grated
1 teaspoonsalt
1 tablespoonolive oil
1 CloveGarlic
minced
1 x 220 GramSweet Corn
can
0.33 CupPolenta
plain flour
0.5 TeaspoonSea Salt
0.5 TeaspoonBaking Powder
0.5 CupGrated Parmesan Cheese
2eggs
Large, beaten
0.33 CupGreek Yogurt
or you can use 3/4 of a Cup of Greek Yoghurt
0.33 CupOlive Oil
to cook the Fritters

Instructions
Step 1
Grate the Zucchini into the bowl. Add the Salt and mix well. Let stand for about 15 Rinse Zucchini and squeeze out the excess water. minutes to extract the water.
Step 2
Heat Oil in Frypan add Onion and Garlic and cook gently until soft.
Step 3
Heat Olive oil in a pan, add Spring onions and Garlic, cook until soft.
Step 4
Add Cooked Vegetables,Egg and Yogurt to the bowl and mix well.
Step 5
Heat Oil in a Large non-stick pan, over a medium heat. Measure 1/3 of the mixture into the pan. Cook until Fritters are golden. About 3-5 minutes.
