Salmon with Anchovy-Garlic Butter

Instructions
Step 1
Preheat oven 400°F.
Step 2
In a small bowl, mash together butter, anchovies, garlic, salt and pepper.
Step 3
In a large oven-proof skillet, melt about half of the anchovy butter.
Step 4
Add fish, skin side down.
Step 5
Cook over high heat to brown the skin, spooning some pan drippings over the top of the fillets as they cook
Step 6
Add cappers to bottom of pan and transfer to oven.
Step 7
Roast until fillets are just cooked through.
Step 8
Remove pan from oven and add remaining anchovy butter to pan to melt.
Step 9
Place salmon on plates and spoon buttery pan sauce over the top.
Step 10
Squeeze the lemon half over the salmon and garnish with chopped parsley.
Step 11
Serve with glazed carrots.
