600gcod fillets
butter
for frying
12baby potatoes
150gsugar snap peas
½ tspblack sesame seeds
½ tspwhite sesame seeds
browned miso butter
soy mayonnaise

Instructions
Step 1
Mix the mayonnaise with soy sauce, grated garlic, and black pepper. Taste and refrigerate until serving. Boil the potatoes until tender. Heat a skillet with butter and fry the cod fillets over medium heat until the internal temperature reaches 48°C (118°F).
Step 2
For the browned miso butter, melt the butter in a small saucepan and let it brown until it has a nutty aroma and golden color. Whisk in the miso paste.
Step 3
Drain the potatoes, cut them in half, and return them to the pot. Add the sugar snap peas, drizzle with a bit of the browned miso butter, and sprinkle with sesame seeds. Toss gently to combine.
Step 4
To serve, plate the potatoes and sugar snap peas, place the cod fillets on top, and spoon over the browned miso butter. Add dollops of soy mayonnaise around the dish and garnish with sesame seeds and fresh coriander.
