Instructions
Step 1
Pre-heat oven to 180ºC (350ºF). Line a baking sheet with parchment paper and set aside.
Step 2
In a medium bowl, whisk together the applesauce, 0 calorie brown sugar, olive oil and vanilla extract until smooth and well combined.
Step 3
Add in the flour, cocoa powder and baking soda and fold in ensuring everything is well incorporated.
Step 4
Divide the dough equally between 3 cookies, flatten each dough ball in between your palms, place one marshmallow in the centre and roll the dough into a ball.
Step 5
Top with the chocolate chips and place the cookies on the prepared baking sheet. Bake for 8-10 minutes.
Step 6
Allow them to cool on the sheet for a few minutes before transferring to a cooling rack to cool completely. Enjoy!
