This is the dairy-free version of the homemade Irish cream we've been making for over 10 years! It's ALWAYS a hit at the holidays. NOTES: 🥃 *Whiskey brands* - the type of whiskey really matters and my personal choice is Tullamore Dew because it's really smooth and a decent price. A 2nd option would be Bushmills. And Jameson 3rd, but I've never tried it in this recipe. 🥛 *Types of dairy-free milks* - The Sweetened condensed coconut milk is a must - you can't really skip this. The brand I like is Nature's Charm. They also make a condensed oat milk version but I haven't tested that. If you can't find it in store, you can make the coconut condensed milk at home by simmering canned coconut milk with sugar. Just google Vegan condensed milk for recipes. As for nut milks - there's a bit more flexibility here depending on availability, budget & personal preference for how think you like your Irish cream. My personal fave combo is a homemade nutmilk with Macadamia nuts & Almonds. I've also done almond/ cashew. And just cashew. They're all good. Store-bought almond milk is usually too thin, so avoid that if possible. Otherwise have fun & enjoy!

Instructions

Step 1
Make sure your coffee is cooled first. (Put the espresso in the fridge or you can use a strong cold brew to make it easy.)
Step 2
Make your homemade nut milk/cream if using. Regardless of nuts, a good ratio is about 1 cup of nuts to 2 cups water. Soak nuts for 8 hours, rinse and blend with fresh water. You'll have some extra you can use for coffee, or another batch of this! ;)
Step 3
Measure everything and pour all the ingredients directly in a blender. Blend LIGHTLY just until combined! Don't overblend - just enough to evenly distribute the stickiest ingredients -condensed milk and chocolate syrup.
Step 4
Store in glass jars and chill in the fridge for a few hours minimum (overnight is even better).
Step 5
Serve over ice and Enjoy! (It's also very good added to coffee!)
