Instructions

Step 1
In a blender, combine 150 ml of sunflower oil and 50 g of sage powder. Blend for about one minute until the mixture is smooth and fully combined. This will ensure that the sage flavor is evenly infused into the oil.
Step 2
Transfer the sage-infused oil mixture to a small pot and gently heat it over medium-low heat. Once the mixture begins to boil slightly, allow it to simmer for two minutes to activate the sage's aroma and flavor.
Step 3
Prepare an ice bath by placing ice cubes in a large bowl. Position a small jar or bottle in the center of the ice bath to collect the oil. Place a fine mesh strainer or cheesecloth over a funnel set into the jar, and carefully pour the hot oil mixture through it. This will filter out the sage powder, leaving only the aromatic sage oil.
Step 4
Let the oil cool completely in the ice bath to maintain its vibrant green color. Once cooled, seal the jar and store the oil in a cool, dark place. Use it to enhance dishes with a subtle sage flavor.
