Instructions
Step 1
Whisk the xanthan gum into water and set aside
Step 2
Beat coconut oil well - no lumps. Add monk fruit sweetener and mix well. Add peppermint extract.
Step 3
Add xanthan gum mix - mix well
Step 4
Mix in arrowroot powder, cocoa powder, baking soda, salt, and almond meal - mix well.
Step 5
Add chocolate chips and chopped walnuts
Step 6
Use cookie scoop to make 1 oz balls, flatten slightly and bake at 375 for 10 min turning tray half way through baking. Cool and enjoy!
