Ingredients
8 servings
1 cupred split lentils
4 ozchorizo
whichever brand
3 cupchicken broth
or bone broth or vegetable broth
2 cupswater
warm
1celery stick
chopped
1carrot
peeled and chopped
2potato
chopped into cubes
0.5bell pepper
2 Tbspyellow onion
chopped
3 clovesgarlic
finely chopped
4vine tomatoes
small, chopped
1 tspblack pepper
1 tspcumin
½ Tbspsea salt
1 packetsazon
1 tspchicken bouillon
¼ cupEpazote
Instructions
Step 1
1. Chopped all vegetables 2. Press saute on instapot, add chorizo, and break a part until fully cooked. 3. Add vegetables to chorizo, pour sazon paquet, salt, cumin, and black pepper. Stir and cook for 5 minutes. 4. In 2 cups of warm water, add 1 cup of red split lentils. Let sook while vegetables cook. 5. Add water and lentils to instapot. 6 . Add 3 cups of broth of your choice. 7. Add Epazote and close the lid. 8. Cook on high pressure for 2 minutes and quick realise when it is done. 9. On on a bowl and enjoy 😉
