Instructions
Step 1
Fry onion and garlic in a bit of oil
Step 2
Add cubed eggplant and/or carrot (optional). fry together with Moroccan spices (or turmeric and cumin will also do)
Step 3
Put couscous to cook and add all other ingredients to the pan. leave in low heat with lid on to soften a bit and absorb flavour
Step 4
Add lemon as a taster (optional) serve with couscous on the side and could also have Yoghurt
