Step 1
Preheat the oven to 220°C (gas mark 7)
Step 2
Peel the potatoes, chop the ends off so they stand, and chop them in half; dice the shallot, and crush the whole garlic cloves
Step 3
Fry the potatoes in hot oil until the base is well browned
Step 4
At this point, flip them and add the butter and accoutrements, before basting until foamy
Step 5
When the butter begins to darken, add the chicken stock and cook in the oven for 30-40 minutes until tender
