Instructions
Step 1
Preheat the oven to 190C.
Cut the chicken fillet in half.From the side of the cut make a horizontal slit to form a pocket.
Step 2
For the filling chop the basil and sun dried tomatoes, crumble the feta and combine all together.
Step 3
Divide feta mixture for the 4 equal parts.
Stuff pockets with the feta mixture and secure openings with the toothpicks.
Step 4
Rub chicken pockets with olive oil, salt , mix of peppers, black pepper and garlic granules.
Step 5
Sear chicken from all sides in a large nonstick oven safe skillet, add more olive oil if needed.
Step 6
When the chicken pockets are browned add garlic cloves, pine nuts, water and heavy cream. Add more salt and pepper if needed. Stir for 1-2 minutes and place in preheated oven for 20 minutes.
Step 7
When ready garnish with parmesan cheese and basil. Enjoy!
