Instructions
Step 1
Place the pomegranate seeds, scallions, parsley and almonds in a medium bowl.
Step 2
Mix in your cooked and cooled quinoa.
Step 3
Toss with olive oil, orange and lime zest, orange and lime juice, salt and pepper.
Step 4
Chop your avocado just before serving to make sure it's as fresh as possible, and fold it gently in.
