Ingredients
10 servings
1 tablespoonolive oil
1yellow onion
1red pepper
1can green chiles
3 tablespoonsgarlic
crushed
1can of diced tomatoes
large
3 cupsvegetable broth
1can corn
1can black beans
1 cupwhite northern beans
2 teaspooncumin
1 teaspoonchilli powder
¼ teaspooncayenne
salt
pepper
½ cuprice
1 cupwater
1 blockcream cheese
corn tortillas
Instructions
Step 1
Add all ingredients except the cream cheese to a crock pot. Heat on Low for 5 Hours
Step 2
Then add cream cheese and heat for another 30 minutes
Step 3
Cut up tortillas into strips. You can add them to the soup as is or you can make them crispy by putting them in a pan with some olive oil.
