This recipe may be used for March Madness or any gameday foods. It’s also a healthier way to prepare canned salmon. I prepared this recipe with the intention of eliminating almost all of the cooking oil.

Ingredients
4 servings
2 x 14.75 ozcans Pink Salmon
8Saltine crackers
2eggs
0.5onion
medium, chopped
0.25red bell peppers
chopped
0.25green bell peppers
1 tablespoonmayonnaise
1 tablespoonDijon mustard
used, grained with wine
1 tablespoonSmoky Paprika Chipotle Seasoning
used, optional
1lemon juiced
1garlic clove
finely, chopped
1 tablespooncanola oil
or vegetable
Instructions
Step 1
Drain liquid from salmon and put salmon in a medium size bowl
Step 2
Crumble crackers and put in a small bowl
Step 3
Add eggs to crackers and mix well
Step 4
Sauté onions and peppers until onions are almost translucent; add garlic. Cook for another minute
Step 5
Mix all ingredients together except the oil
Step 6
Use an ice cream scoop to make the patties. Use two scoops per patty
Step 7
Shape patties, being careful not to make them too large
Step 8
Add oil to a large skillet over medium-high heat
Step 9
Cook patties for a couple of minutes until browned on each side
